Ingredients

  • 2 large or 3 medium potatoes (about 600 gm)
  • 1 tablespoon of olive oil
  • 1/2 teaspoon cumin grain
  • Half teaspoon mustard seeds
  • 1/4 teaspoon of turmeric
  • 1/2 teaspoon salt
  • 2 tablespoon of lemon juice
  • 1 tablespoon chopped fresh coriander

  1. Wash well and boil the whole potatoes with skin until they are soft, but do not fall apart (about 20 min.). By clicking with a knife we can check if they are ready. With cold water, we cooled the potatoes a little and peeled them. We cut the potatoes into small squares, taking care that they do not break.
  2. Heat the oil in a pan then add the cumin seeds and mustard seeds. We roast the seeds about 10 seconds.
  3. Then add the turmeric, potatoes, and salt. For a few minutes, we let the potato brown, stirring carefully with a wooden spoon. Potatoes should not stay very dry, only slightly browned on the outside.
  4. Finally, we incorporate the lemon juice and chopped cilantro, stir and serve a hot snack or accompanied by other dishes Indian cuisine.

Red Lentil-Bean Curry – Dal Kofta Curry

This is another easy vegetarian recipes adapted from lentil koftas curry. Koftas are vegetable meatballs from the cuisine of India and other countries. In this recipe, we have used red lentils for meatballs. For the sauce of Indian balls of lentils we have thought of a simple, but delicious coconut curry.

Ingredients

  • 200 gm of red lentils
  • 1 carrot
  • 1 tablespoon of olive oil
  • 2 cloves of garlic + 2 more for the balls
  • A coriander bouquet
  • 1/2 onion
  • 250 ml. of coconut milk
  • 1/4teaspoon of turmeric
  • 1/2 teaspoon cumin
  • 1/4teaspoon ground pepper
  • 1/2 teaspoon salt
  • (Extra olive oil for frying)

Wash the red lentils and let them soak for 1 hour and a half. While we are preparing the coconut curry.

Chop the onion finely. We also chop 2 cloves of garlic and reserve them separately.

Heat in a pan 1 tablespoon of oil over medium-high heat and sauté the chopped garlic. When it is browning, add the turmeric and cumin (be careful, the amounts of the spices are indicated in teaspoons of the dessert!). We remove with a wooden spoon for 5 seconds and add the chopped onion. Again stir and add salt and pepper. We go down to medium heat. We will see that the onion has been impregnated with spices and has a saffron color.

Further Steps

When the onion (after about 5 min.) We poke the coconut milk in the pan and let it cook for 10-15 min. Turning it over with the spoon from time to time. We put out the fire and reserve our curry with a lid.

When the hour and a half of soaking the lentils have passed, we will prepare the balls (mini koftas) Drain the lentils well, add the grated carrot, 2 garlic cloves, and the cilantro finely chopped and a pinch of salt. With the blender, we process everything well, until a homogenous mass remains.

We make small balls (2 centimeters in diameter approx.) With the dough.

Heat oil in a pan to fry the balls. There must be enough oil to cover the bottom of the pan. When the oil is hot (we can put a little dough in the pan to “warn us”) in batches we are placing the balls slightly crushed. After a few seconds, we move the balls a little, so they do not stick to the bottom. When we see that they have been roasted on one side, we turn them over with the help of 2 forks. We finished frying the other side of each ball.

When we have all the prepared mini koftas of lentils, we check that our curry is still hot. We spread the balls on the plates and bathe them with the coconut curry. We can garnish with chopped cilantro and ready to serve.
